Our Story
Named for the girl who loves bread.
Ember Dough Co. is a family-made sourdough bakery rooted in South Florida. Every loaf carries a little girl's name — and a whole lot of heart.
How it started
Flour on tiny hands.
It started the way the best things do — with a curious kid and a messy kitchen. Our daughter Ember fell in love with sourdough before she could pronounce it. She'd pull up a stool, dust her hands in flour, and watch the dough come together like it was the most magical thing in the world. For her, it was. For us, watching her, it still is.
We started baking seriously because of her. What began as weekend loaves for the family slowly became something neighbors asked about, then friends, then friends of friends. The starter that lives on our counter has been fed every single day. The process hasn't changed — long fermentation, real ingredients, a screaming-hot oven, and a little girl who still sneaks into the kitchen to check on the dough.
The process
No shortcuts. Ever.
The Starter
Everything begins with our living sourdough starter — fed daily, never rushed. It's the heart of every loaf we make.
The Ferment
We cold-ferment every loaf for a minimum of 48 hours. Slow fermentation builds flavor, improves digestibility, and creates that signature tang.
The Bake
Each loaf bakes in a Dutch oven at high heat. The steam creates the open crumb; the heat creates the crust. No additives. No shortcuts.
The Pickup
We bake in small batches weekly. Orders close Wednesday for Friday–Saturday pickup. Fresh bread, made to order, every time.
What we believe
Real ingredients only.
Flour, water, salt, and time. That's it. No preservatives, no dough conditioners, no shortcuts.
Small batches, always.
We never scale beyond what we can make with care. Every loaf gets our full attention.
Made for families.
This bread started with our family and it's made for yours. We think about the little hands that will hold it.
